Abstract

A Segurança Alimentar é atualmente uma das áreas mais importantes de saúde pública a nível mundial, visto que nos tempos modernos a distribuição dos alimentos é global. A questão da disponibilidade alimentar tem vindo a ser ultrapassada: a sazonalidade é praticamente inexistente e observa-se uma verdadeira explosão de novos produtos alimentares que, quer em número, quer em variedade, ditam novos consumos. O sedentarismo, o stress e a alimentação incorreta, entre outras consequências do estilo de vida característico das grandes cidades, tem dado origem a uma inquietação difundida com a saúde, por parte dos consumidores. Seguindo esta tendência, surgiram no mercado diversos produtos que se fundamentam, justamente, numa atitude saudável e de promoção de qualidade de vida. Entre eles encontram-se os alimentos fortificados, alimentos funcionais e os suplementos alimentares, que têm tido um crescimento notável ao longo da última década. O marketing aplicado aos alimentos é um fator determinante na modulação dos ambientes alimentar e nutricional e, consequentemente, das escolhas alimentares. Sendo essencial a rotulagem nutricional na diferenciação de produtos. Embora as tendências sociodemográficas favoreçam o desenvolvimento deste mercado, o seu custo, a necessidade de provar a sua eficácia e segurança, assim como a urgência em educar os consumidores, aconselham a que se caminhe no sentido de um maior conhecimento dos produtos alimentares. Neste contexto, a presente monografia procura analisar alguns traços importantes deste mercado.

Food Security is currently one of the most important areas of public health worldwide, since in modern times the distribution of food is global. The question of food availability has been overcome: seasonality is practically non-existent and there is a real explosion of new food products which, in terms of numbers and variety, lead to new consumption. With the sedentary lifestyle of urban centres, stress and an incorrect diet, consumers start giving special attention and value to health. Following this tendency, appeared, in the market new products that are based, precisely, in a healthy attitude and promotion of quality of life. Functional food, fortified foods, and food supplies, are among this group that grown remarkably over the past decade Food marketing is a determining factor in the modulation of food and nutritional environments and, consequently, of food choices. Nutrition labeling is essential in product differentiation. Although socio-demographic trends favor the development of this market, their cost, and the need to prove their efficacy and safety, as well as the urgency of educating consumers, call for a move towards greater knowledge of food. In this conext, the present research is available on some important features of this market.
