Abstract

Actualmente tem havido uma crescente preocupação por parte da população em geral na escolha dos alimentos a consumir, com o intuito de que esta escolha possa conduzir a efeitos benéficos para a saúde, principalmente na possível prevenção de várias doenças. Muitas das características preventivas atribuídas a alguns alimentos, são referidas como sendo consequência das suas propriedades antioxidantes, ou mais concretamente do seu conteúdo em compostos antioxidantes. Assim, a procura de alimentos denominados como alimentos funcionais, ou seja, aqueles que trazem benefício à saúde, tem sido crescente. A dieta mediterrânica tem sido uma das dietas mais referidas como benéfica para a saúde e a avaliação das propriedades antioxidantes dos alimentos incluídos nesta dieta tem sido alvo de alguma análise pela comunidade científica. Nesta dissertação pretende-se conhecer os principais alimentos contidos na dieta mediterrânica e os diversos constituintes desses alimentos, principalmente os responsáveis pelas suas propriedades antioxidantes. Adicionalmente, e uma vez que para efectuar uma análise mais robusta da actividade antioxidante é necessário avaliar diferentes mecanismos de acção, serão ainda abordados os dois principais mecanismos de acção dos antioxidantes, por transferência de átomos de hidrogénio ou por transferência de um electrão. As diversas técnicas incluídas em cada um desses mecanismos gerais serão também abordadas. É possível compreender com esta dissertação que efectivamente alguns alimentos da dieta mediterrânica têm elevado conteúdo em antioxidantes e que este conteúdo pode ser relevante no que diz respeito à protecção e prevenção da saúde da população. No entanto, este não pode ser o único factor considerado para efectuar uma afirmação objectiva de protecção para a saúde, sendo necessária a execução de mais estudos robustos que considerem a actividade antioxidante, bem como outras propriedades destes alimentos relevantes para a caracterização dos seus efeitos na saúde.

Currently there has been a growing concern among the general population to choose foods that may lead to benefic health effects, particularly to prevent various diseases. Many of the preventive characteristics attributed to some foods are referred to as being a consequence of their antioxidant properties, or more specifically of their content in antioxidant compounds. Thus, there has been a growing interest in finding foods denominated as functional foods, that is, those that bring health benefits. The Mediterranean diet has been one of the most referred diets as beneficial to health and the evaluation of the antioxidant properties of foods included in this diet has been the subject of some analysis by the scientific community. This dissertation addresses the main foods contained in the Mediterranean diet and the various constituents of these foods, especially those responsible for their antioxidant properties. Additionally, to perform a more robust analysis of the antioxidant activity, it is necessary to evaluate different mechanisms of action. The two main mechanisms of action of antioxidants, either by transfer of hydrogen atoms or by transfer of an electron, will be discussed. The various techniques included in each of these general mechanisms will also be addressed. With this dissertation, it is possible to understand that indeed some foods of the Mediterranean diet have high content in antioxidants and this may be relevant in terms of health protection and prevention for the population. However, this should not be the only factor considered to make an objective statement about health protection, and it is necessary to perform more robust studies that consider, not only, the antioxidant activity of these foods, but also other properties relevant for the characterization of their effects in the Health.
