Abstract

As Dioxinas são compostos orgânicos policlorados, contaminantes da cadeia alimentar conhecidos pelos seus efeitos adversos para a saúde humana e animal, nomeadamente problemas de desenvolvimento embrionário e físico, carcinogénicos e reprodutivos. Não existe um limite de segurança consistente, uma vez que é possível induzir cancro em animais de laboratório mesmo com doses muito baixas. As dioxinas são eficientemente absorvidas no tracto gastrointestinal e acumulam-se no organismo no tecido adiposo, aumentando o risco com a intensidade e com a duração da exposição, ou seja, com a idade. No que respeita à carcinogenicidade, o congénere tetraclorado, a "2,3,7,8-TCDD" (tetracloro-dibenzeno-paradioxina) é uma das substâncias mais tóxicas com um dos maiores potenciais carcinogénicos para os humanos. Apresenta-se o estudo de caso de contaminação da cadeia alimentar por dioxinas em carnes de aves, ocorrido em Portugal, em 2006 e procede-se à análise da eficácia das medidas adoptadas para combater este grave risco para a saúde pública. Os resultados do estudo permitem concluir com segurança que a fonte de contaminação original das aves era as respectivas camas, constituídas por aparas de madeira obtidas de pinheiros ardidos nos fogos florestais de Verão. Os factos descritos e analisados demonstram que existe uma estreita correlação entre as contaminações por dioxinas induzidas acidentalmente na natureza e as respectivas repercussões na cadeia alimentar.

ABSTRACT : Dioxins are polichlorinated organic compounds, which can be introduced in food chain and are known for having adverse effects in human and animal health, causing problems in embryo, in physical development and are carcinogenic and affect reproductive function. The security level is not known with confidence, attending that is possible to induce cancer in laboratory animals even with very low doses. Dioxins are actively absorbed in the gastrointestinal tract and accumulate in the organism in the adipose tissue, increasing the risk with the intensity and duration of the exposure, i.e. with the age. In respect to carcinogenicity, the tetra chlorinated congener, “2,3,7,8-TCDD” (tetra chlorinateddibenzo-dioxin) is one of the most toxic substances with a well known carcinogenic potential for human beings. We present a case study of Dioxin food chain contamination, in poultry meat, occurred in Portugal, 2006. The current study tries to assess the efficacy of the measures taken to address the problem which have a high risk to public health. The results of the study allow us to firmly conclude that the origin of the contamination of poultry meat was the respective litters, which were composites by wood litters from pine trees burned in the summer forest fires. The assessed data demonstrates a good correlation between the profile of dioxin contamination accidentally induced in nature and their respective repercussions in food chain.
