Abstract

A Segurança Alimentar é actualmente um requisito indispensável para todos os operadores económicos intervenientes na cadeia alimentar. É também uma preocupação crescente dos consumidores cada vez mais conscientes dos perigos (físicos, químicos e biológicos) que podem ser veiculados nos alimentos. A abordagem de todos estes perigos constituiria tarefa demasiado longa para o objectivo deste trabalho. Assim, pretende-se nesta Dissertação reflectir e analisar alguns dos resíduos químicos (medicamentos veterinários em particular), que podem estar presentes nos alimentos de origem animal, em particular nos ovos. Iniciámos com uma perspectiva do conceito de Segurança Alimentar que se pretende implementar no mundo global, organismos intervenientes nesta matéria e preocupações registadas na evolução deste conceito. Os métodos aplicados para a determinação dos perigos reais e do respectivo risco inerentes aos alimentos consumidos e as medidas a aplicar no seu controlo e gestão serão também abordados. Referem-se igualmente os métodos utilizados na monitorização dos resíduos de medicamentos veterinários em produtos de origem animal, dando como exemplo a descrição do Plano Nacional de Controlo de Resíduos. Por último efectua-se uma análise retrospectiva do controlo obrigatório dos resíduos químicos estabelecido pela Directiva 96/23/EC aplicados à matriz ovo na União Europeia. Do resultado desta análise conclui-se que na União Europeia do ponto de vista de resíduos químicos (medicamentos veterinários e contaminantes), é actualmente seguro incluir o ovo como produto alimentar de origem animal, no nosso cabaz alimentar.

ABSTRACT - Food Safety is actually a requirement for all stakeholders that participate in the food chain. Nowadays it is also a consumer concern due to the consciousness of the physical, chemical and biological hazards that can be transmitted by food. Dealing with all these hazards it would be a very hard task to complete in this work. So the goal of this document is to reflect and analyze on some of the quimical residues (especially veterinary medicines) that can be present in food of animal origin. This work starts with a food safety globalization perspective, the presentation of the organizations involved and the concerns about this issue throughout time. The methods used to settle the real hazards that can be transmitted by food and which measures should be applied for control and monitoring are also a matter of this work. It is referred the used methods for monitoring residues of veterinary medicines in food of animal origin, and the national residues control plan is described. Finally, a retrospective analysis is made of the chemical residues that are required by the Directive 96/23/EC in eggs in the European Union. As a conclusion of this analysis we can say that in the European Union, considering the veterinary medicines and contaminants residues, it is safe to include eggs as a product of animal origin in our diet.
