Abstract

Este trabalho tem como objetivo realizar um estudo de caracterização morfológica e das caraterísticas do leite de animais da raça ovina Saloia no seu solar original, no concelho de Loures, Distrito de Lisboa. Os dados morfológicos foram recolhidos no rebanho da Quinta das Carrafouchas, com a medição de 55 animais para as características: peso vivo, comprimento corporal, altura anterior, altura posterior, perímetro torácico, largura da garupa, altura da garupa e perímetro da pata traseira. A recolha do leite foi feita manualmente nos animais que se encontravam em lactação. Através de um milkoscan determinando-se as percentagens de gordura, proteína e lactose. Com um optigraph determinaram-se as propriedades tecnológicas relevantes na coagulação: início da coagulação (R), consistência do gel após 2R (AR), consistência do gel após 3R (A2R), consistência do gel aos 20 minutos (A20), consistência do gel aos 40 minutos (A40), e consistência padrão a 7,0 Volt após R (OK20). Finalmente, com recurso a técnicas de espectrometria de massa acoplada a cromatografia de fase gasosa determinou-se o perfil de ácidos gordos do leite. Os resultados morfológicos apontam para valores médios de 41,3 kg, 71,4 cm e 58 cm para os parâmetros Peso Vivo, Comprimento Corporal e Altura Anterior respetivamente. As percentagens médias de gordura, proteína e lactose do leite foram de 9,16%; 6,55% e 4,66%, respetivamente. Os valores médios de R (Inicio da coagulação) foram da ordem dos 14:34 minutos. Através deste estudo, realizou-se uma caracterização produtiva e morfológica deste rebanho, um dos poucos ainda existente no solar original desta raça, contribuindo desta forma para uma descrição da raça, uma no âmbito das suas potenciais aptidões no ramo da produção animal, que poderá ser importante para a preservação da raça como património genético autóctone. Servirá também para uma análise comparativa com outras raças da espécie ovina.

This work aims to make a study of the morphological characterization and milk characteristics from animals of the Saloia sheep breed in its original homeland, in the municipality of Loures, District of Lisbon. Data was collected from a herd at Quinta das Carrafouchas, with the measurement of 55 animals for the characteristics: live weight, body length, anterior height, posterior height, thoracic perimeter, rump width, rump height and perimeter of the hind leg. The milk collection was done manually from the lactating animals. Through a milkoscan the percentages of fat, protein and lactose were determined. With an optigraph, the relevant technological properties in coagulation were determined: onset of coagulation (R), gel consistency after 2R (AR), gel consistency after 3R (A2R), gel consistency after 20 minutes (A20), gel consistency after 40 minutes (A40), standard consistency at 7.0 Volt after R (OK20). Finally, using mass spectrometry coupled with gas chromatography techniques, the fatty acid profile of the milks was determined. The morphological results point to mean values of 41.3 kg, 71.4 cm and 58 cm for the parameters Live Weight, Body Length and anterior Height, respectively. The mean percentages of fat, protein and lactose in milk were 9.16%; 6.55% and 4.66%, respectively. The mean values of R (Onset of coagulation) were in the order of 14:34 minutes. Through this study, a productive and morphological characterization of this flock was conducted. This flock is one of the few that remains in the original homeland of this breed, thus contributing to an improved description of the breed, thus contributing to the characterization of the breed and its productive potential. This is of high importance to the preservation of the breed as an autochthonous genetic heritage. It will also serve for a comparative analysis with other breeds of sheep, particularly regarding milk characteristics.
