Abstract

O presente trabalho constitui uma reflexão sobre a evolução histórica da posição e configuração arquitectónica dos espaços culinários na casa — espaço de confecção e espaço de consumo de alimentos — e os significados culturais e sociais dessa transformação, cruzando-os com as práticas alimentares da sociedade de cada época. Abarcando um período histórico desde a Roma Antiga à contemporaneidade, e focando-se no contexto doméstico urbano, abordam-se os comportamentos e representações sociais, bem como as confecções culinárias, como motores de transformação espacial da arquitectura doméstica. Assim, partindo do conceito de performance culinária, exploram-se as interacções entre o cenário arquitectónico dos espaços culinários, os actores que desempenham as actividades de confecção e consumo alimentar, e o argumento, veiculado pela comida.

ABSTRACT: The following study is a reflection about the historical evolution of the position and architectural configuration of the culinary spaces in the house — spaces where food is cooked and eaten — and the cultural and social meanings of that transformation, combined with the foodways of each society. Covering a historical period from Ancient Rome to the present, and focusing on the urban house, the social behaviour and representations, as well as cookery, are addressed as propellers of spatial transformation of the domestic architecture. Therefore, taking the concept of culinary performance, the interactions between the architectural setting of the culinary spaces, the actors that cook and eat, playing a social role, and the script, materialized by food itself, are explored.
