Melhoria da qualidade na produção biológica de vegetais

Abstract

A produção em agricultura biológica assume-se cada vez mais como uma oportunidade para a agricultura portuguesa. Por um lado, este modo de produção faz uso de métodos e práticas respeitadoras do ambiente. Por outro lado, porque produz produtos diferenciados com um valor acrescentado, que têm registado um aumento na procura por parte do consumidor. Contudo, a produção biológica também deve respeitar as Boas Práticas de Higiene, as Boas Práticas de Fabrico para além das Boas Práticas Agrícolas. Assim, os objectivos deste trabalho foram: caracterizar a empresa e fazer um levantamento dos principais pontos fracos, pontos fortes, ameaças e oportunidades; identificar os principais problemas em termos de higiene e segurança alimentar; propor um plano de ação para a melhoria da qualidade, com especial ênfase na vertente higiene e segurança alimentar e promover intervenções iniciais de melhoria no processo produtivo pós-colheita. ABSTRACT: The production in organic farming has assumed more and more importance as an opportunity for the Portuguese agriculture. On one hand, this mode of production makes use of environmentally friendly methods and practices. Moreover, it produces differentiated goods with added value, which have seen an increase in demand by consumers. However, organic production must also respect the Good Hygiene Practices, Good Manufacturing Practices, besides the Good Agricultural Practices. Thus, the objectives of this study were to characterize the company and make a survey of its main weaknesses, strengths, threats and opportunities; identify key issues in terms of hygiene and food safety; propose an action plan for quality improvement, with special emphasis on hygiene and food safety aspects and promote early interventions to improve the post-harvest process.
