Abstract

Todo o setor alimentar tem a responsabilidade de garantir a segurança dos géneros alimentícios, tornando a existência de sistemas de Segurança Alimentar um requisito obrigatório. No entanto, a sua garantia não se pode basear exclusivamente em boas práticas, devendo estas estar integradas num programa mais abrangente baseado na Análise de Perigos e Pontos Críticos de Controlo (APPCC). A aplicação de medidas preventivas é efetuada por empresas certificadas, como a SEMA – Associação Empresarial, empresa na qual foi realizado o estágio profissionalizante do mestrado de Engenharia Alimentar, ministrado pela Escola Superior Agrária do Instituto Politécnico de Coimbra.Com este relatório, pretende-se abordar os assuntos tratados durante o estágio realizado, como a realização de planos e visitas de acompanhamento no âmbito do HACCP (Hazard Analysis and Critical Control Point, APPCC em inglês), apresentando os principais componentes para uma adequada compreensão da implementação do Sistema HACCP e tendo sempre em mente que a utilização deste método deve ser adaptada ao processo de produção particular de cada empresa.
