Abstract

O Bacalhau é o peixe mais consumido em Portugal. Assim sendo, estudos que garantam a sua Segurança Alimentar para os consumidores são de extrema importância. Neste estudo, a prevalência de nematodes Anisakidae no Bacalhau foi avaliada a nível industrial. Recolheram-se no total 240 amostras de lotes de peixe aleatórios, destas 150 de Bacalhau-do-Atlântico (Gadus morhua) capturado nas subdivisões da zona de pesca FAO 27 (Região Nordeste do Atlântico), 80 de Bacalhau-do-Pacífico (Gadus macrocephalus) e 10 de Paloco-do-Pacífico (Gadus chalcogramma) capturado na zona de pesca FAO 67 (Região Nordeste do Pacifico). Foi efetuada uma inspeção visual macroscópica numa bancada com luz branca de alta intensidade via "Candle table" para avaliar a presença dos parasitas e proceder à sua remoção da musculatura. Foi relatada uma aparente relação da carga parasitária com a espécie de Bacalhau-do-Pacífico (Gadus macrocephalus), uma potencial relação com a zona de captura da FAO 67 e uma aparente relação entre o peso do peixe e a carga parasitária. Este estudo permitiu efetivamente avaliar a importância de um elevado rigor de controlo a nível de Segurança Alimentar em determinados lotes que apresentem os fatores de risco associados a maior carga parasitária.
