Abstract

Resumo O estágio profissional teve lugar na Doceleia – Doçaria Tradicional, Lda, sendo este direcionado para a Segurança Alimentar e Controlo de Produção na Indústria de Pastelaria Ultracongelada, tendo a duração de 22 semanas. Este estágio tem como base a conclusão do Mestrado em Engenharia Alimentar. A Doceleia encontrava-se numa fase de grande restruturação, quer a nível administrativo quer a nível de produção. Os objectivos de mercado estavam a ser elevados e a produção em forma de consequência tinha de conseguir acompanhar todas as restruturações, não descurando na qualidade e segurança do produto, sendo para isso essencial avançar com novas implementações. Todo o trabalho desenvolvido durante o estágio foi com base na implementação dos pré-requisitos, parametrização dos processo de produção. As parametrizações foram a base do Controlo de Produção e permitiram calcular os custos de produção até então em falta. Em suma, o estágio realizado na Doceleia permitiu-me avançar com a revisão de todo o sistema de Segurança Alimentar assim como com implementações a nível dos processos produtivos, sendo o objectivo rentabilizar todos os recursos existentes assim como estabilizar as produções realizadas. Food Production Control and Security in the Confectionery Industry quick-frozen Abstract The traineeship held in Doceleia – Doçaria Tradicional, Lda, which is directed to the Food Safety and Production Control in the deep-frozen Confectionery Industry. The traineeship lasted for of 22 weeks. This stage is based on the completion of the Master in Food Engineering. The Doceleia was in a phase of major reorganization, both at the administrative level and at the level of production. The market objectives were to be high and the production had to keep up with all the restructuring, not forgetting the quality and safety of the product, it is essential to move forward with new implementations. All work carried out during the internship was based on the implementation of the prerequisites and configuration of the production process. Parameterizations were the basis of the Production Control and used to calculate production costs missing. In sum, the traineeship held in Doceleia allowed me to move forward with the review of the entire system of food safety as well as implementations in terms of production processes. The objective is to monetize all existing resources and stabilize the productions performed. Key-words: parameterization, food security, prerequisites, production control, production costs.
