Abstract

Resumo Este relatório resulta do estágio profissionalizante do Mestrado em Engenharia Alimentar da Escola Superior Agrária de Coimbra. O estágio decorreu na Doceleia, Doçaria Tradicional, Lda em Alcobaça, entre os dias 13 de janeiro e 13 de julho de 2014 tendo como principais objetivos a revisão do sistema HACCP e alteração da rotulagem dos seus produtos de acordo com a nova legislação em vigor. A Doceleia tem como atividade a produção de Bolos e Doces ultracongelados. O relatório apresenta uma descrição do modo de funcionamento da indústria Doceleia e a descrição das tarefas realizadas durante o estágio com especial ênfase para a revisão do sistema HACCP e alteração da rotulagem, assim como a elaboração de instruções de trabalho. Palavras-Chave: Qualidade, Bolos, HACCP, Rotulagem iv Abstract This report results from internship of the Masters in Food Engineering from “Escola Superior Agrária de Coimbra”. The internship took place in Doceleia, Doçaria Tradicional, Lda in Alcobaça, between 13 January and 13 July 2014 with the main objectives to review the HACCP system and change in the labeling of their products according to the new legislation. The Doceleia is engaged in the production of frozen cakes and pastries. The report shows the Doceleia industry’s operating mode description and the description of the tasks performed during the internship with special emphasis on the review of the HACCP system and change in the labeling, as well as the preparation of work instructions.
