Actividad del agua de la miel y retención de sustancias volátiles aromáticas

Abstract

La actividad del agua de la miel influye en la liberación/retención de sustancias volátiles aromáticas, existiendo entre la actividad del agua y el aroma de la miel una relación positiva. Este efecto de naturaleza física, en el que interviene un fenómeno de superficie, es explicable a la luz de la teoría de la deshidratación de alimentos líquidos y de la teoría de la difusión selectiva. En una población de muestras de miel la influencia de la actividad del agua sobre el aroma queda enmascarada por el mayor efecto que sobre el mismo tiene la procedencia floral.
