Abstract

En los últimos tiempos, la necesidad de contar con sistemas alimentarios que además de ser económicamente viables y socialmente equitativos, cuenten con procesos de producción respetuosos con el medio ambiente, sitúan la elaboración sostenible del aceite de oliva como una de las principales preocupaciones y prioridades del sector. En este contexto, la evaluación del desempeño de las empresas oleícolas desde una perspectiva holística, es decir, además de las tres dimensiones de la sostenibilidad (económica, social y ambiental), incluyendo su grado de eficiencia que abarca sus cuatro componentes (técnica, de escala, asignativa y de costes), así como el diseño de alternativas de gestión sostenible se han convertido en actividades fundamentales para la empresa. Así, el objetivo principal de esta tesis es analizar la fase de transformación y elaboración del aceite de oliva de una muestra representativa de las almazaras ubicadas en Andalucía (España), principal región productora de aceite de oliva a nivel internacional para identificar los factores que influyen sobre su eficiencia y sostenibilidad, con el fin de diseñar estrategias que mejoren su posicionamiento en relación con estos dos aspectos clave. Para ello, en primer lugar, haciendo uso de técnicas no paramétricas, se estima la eficiencia en sus cuatro componentes, que se agrupan en un índice global de eficiencia. En segundo lugar, se evalúa la sostenibilidad a partir de indicadores de sostenibilidad asociados a cada dimensión de la sostenibilidad que, a través del Análisis Envolvente de Datos (DEA) sirven de base para construir índices sintéticos de sostenibilidad social, económica y ambiental, y estos, a su vez, se agregan en un índice global de sostenibilidad. A partir de ambos índices globales se establece una tipología de las almazaras cooperativas. A continuación, se realizan análisis de regresión truncada y técnicas de bootstrapping para identificar los factores determinantes de la eficiencia y la sostenibilidad de las almazaras. Los resultados muestran que factores como la dimensión y el tamaño empresarial, la apuesta por la calidad, y la formación y profesionalización de los gestores son elementos clave para el desarrollo sostenible y eficiente de las almazaras. En consecuencia, se proponen estrategias encaminadas a mejorar su eficiencia y sostenibilidad que pueden ser de utilidad para los responsables de las empresas oleícolas.

In recent times, the need for food systems that are not only economically viable and socially equitable, but also have environmentally friendly production processes, has made the sustainable production of olive oil one of the main concerns and priorities of the sector. In this context, the evaluation of the performance of olive oil companies from a holistic perspective, i.e. in addition to the three dimensions of sustainability (economic, social and environmental), including their degree of efficiency covering its four components (technical, scale, allocative and cost), as well as the design of sustainable management alternatives have become fundamental activities for the company. Thus, the main objective of this thesis is to analyse the olive oil transformation and production phase of a representative sample of olive oil mills located in Andalusia (Spain), the leading olive oil-producing region at the international level. The aim is to identify the factors that influence their efficiency and sustainability and design strategies to improve their positioning in relation to these two key aspects. To this end, firstly, using non-parametric techniques, efficiency is estimated in its four components, which are grouped into an overall efficiency index. Secondly, sustainability is assessed based on sustainability indicators associated with each dimension of sustainability, which, through Data Envelopment Analysis (DEA), serve as a basis for constructing synthetic indices of social, economic and environmental sustainability, and these, in turn, are aggregated into an overall sustainability index. A typology of cooperative olive mills is established based on these global indices of efficiency and sustainability. Truncated regression analysis and bootstrapping techniques are then carried out to identify the factors determining the efficiency and sustainability of the olive oil mills. The results show that factors such as company size and dimension, commitment to quality, and manager training and professionalisation are crucial for the sustainable and efficient development of olive oil mills. Consequently, strategies aimed at improving their efficiency and sustainability are proposed, which may be useful for olive oil company managers.
