Questo articolo ha lo scopo di studiare l’uso e la frequenza delle spezie in due im-portanti ricettari trecenteschi italiani: il Libro de la cocina (Anonimo Toscano) e il Libro di cucina del secolo XIV (Anonimo Veneziano). Si vuole fornire un contributo sull’im-patto che le spezie hanno avuto nell’alimentazione. Il metodo usato è quello dell’analisi comparativa di categorie di cibi. In particolare, abbiamo cercato di verificare se le spezie fossero usate con uguale intensità o se non ci fosse per Venezia la necessità di conoscerle meglio rispetto all’ambito toscano.
This article aims at studying the use and frequency of spices in two important Italian cookbooks: Libro de la cocina (Anonimo Toscano) and Libro di cucina del secolo XIV (Anonimo Veneziano), both belonging to the XIVth century. We want to provide a con-tribution on the impact the spices have had on nutrition. The method used is the com-parative analysis of food categories. Particularly, we tried to verify whether the spices were used with equal intensity or if there was no need for Venice to know them better than in the Tuscan environment.
