Abstract

Dissertação de Mestrado Integrado em Medicina Veterinária, Ciências Veterinárias O presente trabalho pretende apresentar o desempenho profissional no âmbito da Inspecção Sanitária, realizado ao longo dos últimos doze anos. Neste âmbito, fez-se o enquadramento do suporte legal que regulou esta actividade e na parte final, desenvolve-se, com mais acuidade, a inspecção sanitária de ovinos, uma vez que se tratou da principal espécie animal inspeccionada neste período de tempo. No contexto geral, abordam-se alguns temas importantes como a IRCA, a Inspecção ante-mortem, Bem-estar animal, Inspecção post-mortem, Matérias de Risco Especificado e Outros Subprodutos Animais, Testes laboratoriais, Marca de Salubridade e Programas de Luta, Erradicação e Vigilância das Doenças Animais e Zoonozes. Na última parte do trabalho, capítulo reservado à inspecção dos ovinos, apresenta-se, para além de alguns detalhes da inspecção ante e post-mortem desta espécie, as principais causas de reprovação total e parcial. Salienta-se a Brucelose, no âmbito dos abates sanitários, e as pneumonias/pleuropneumonias como principais causas de reprovação total nos ovinos adultos. Por sua vez, nos ovinos jovens os principais motivos foram as pneumonias/pleuropneumonias, seguidas das carnes imaturas/caquexias. No que diz respeito às reprovações parciais, verificou-se que o fígado foi o órgão com maior percentagem de reprovações, seguido dos pulmões, sendo o motivo principal o parasitismo, em ambos os órgãos, seguido dos abcessos hepáticos, no que se refere ao fígado, e pneumonias, mais ou menos extensas, no que se refere aos pulmões. This work intends to present the work performance within the Sanitary Inspection, conducted over the past twelve years. In this context, it was the support of the legal framework regulating this activity and in the end, it develops, more acutely, health inspection of ovine, since it was the main species inspected in this period of time. In the general context, to address some important issues such as the IRCA, the ante-mortem inspection, animal-welfare, post-mortem inspection, specified risk material and other by animals products, laboratory tests, health mark and programs of eradication, control and animal disease surveillance and zoonozes. In the latter part of the work, chapter reserved for the inspection of ovine is presented, as well as some details of ante-mortem and post-mortem of this species, the main causes of total and partial failure. In this context, we emphasize the Brucellosis, under the stamping, and pneumonia/pleuropneumonia as the main cause of total failure in adult sheep, whereas the main reason in lambs were pneumonia/pleuropneumonia, followed by immature meat/cachexia. With respect to partial failures, it was found that the liver was the organ with the highest percentage of failures, followed by the lungs and is the main reason parasitism for the two bodies, followed by liver abscesses in relation to the liver and of pneumonia, more or less extensive, with regard to the lungs.
