A amêndoa é um dos frutos secos mais consumidos em todo o mundo, com benefícios para a saúde associados à disponibilidade de compostos bioativos e ácidos gordos. As amêndoas costumam ser comidas cruas ou após algumas etapas de processamento, como torrefação ou branqueamento. No entanto, esses procedimentos podem influenciar positiva ou negativamente os atributos químicos e sensoriais das amêndoas. Este trabalho foi realizado com o objetivo de avaliar os efeitos de dois tratamentos de processamento, torrefação e branqueamento sobre (I) teores de compostos bioativos, (II) teores de ácidos gordos, (III) atividade antioxidante e (IV) características sensoriais de quatro cultivares portuguesas negligenciadas de amendoeira (Casanova, Molar, Pegarinhos e Refêgo) e duas cultivares estrangeiras (Ferragnès e Glorieta). Em geral, os resultados mostraram que os níveis de compostos bioativos e atividade antioxidante aumentaram com a torrefação e diminuíram com o branqueamento. Os perfis de ácidos gordos das amêndoas cruas, de todas as cultivares foram genericamente idênticos, embora a cultivar Refêgo exibisse um alto teor de ácido α-linolénico. Após a torrefação e branqueamento, o conteúdo de ácidos gordos polinsaturados aumentou, enquanto os ácidos gordos saturados, ácidos gordos monoinsaturados e vários índices de avaliação da qualidade lipídica diminuíram. A torrefação afetou positivamente a perceção da cor da película e doçura das cultivares Ferragnès e Glorieta, bem como a rugosidade da película das cultivares Molar e Pegarinhos. O branqueamento, por outro lado, levou a mudanças positivas nas propriedades texturais das cultivares Refêgo e Pegarinhos. Este estudo revela os benefícios nutritivos do consumo de cultivares de amêndoas negligenciadas em Portugal, e os novos dados aqui reportados podem ser do interesse dos produtores, empresas de processamento e consumidores.
Almond is one of the most commonly consumed nuts worldwide, with health benefits associated with availability of bioactive compounds and fatty acids. Almonds are often eaten raw or after some processing steps, like roasting or blanching. However, these procedures can positively or negatively influence chemical and sensorial attributes of almonds. This work was carried out to assess the effects of two processing treatments, namely roasting and blanching on (I) contents of bioactive compounds, (II) contents of fatty acids (III) antioxidant activities (IV), sensorial characteristics of four neglected Portuguese almond cultivars (Casanova, Molar, Pegarinhos and Refêgo) and two foreign cultivars (Ferragnès and Glorieta). In general, results showed that levels of bioactive compounds and antioxidant activities increased with roasting and decreased with blanching. Fatty acid profiles of raw kernels of all cultivars were generally identical although Refêgo exhibited a high content of α-linolenic acid. Following roasting and blanching, content of polyunsaturated fatty acids increased while saturated fatty acids, monounsaturated fatty acids and several health lipid indices decreased. Roasting positively affected perception of skin colour and sweetness of Ferragnès and Glorieta as well as skin roughness of Molar and Pegarinhos. Blanching on the other hand led to positive changes in textural properties of Refêgo and Pegarinhos. This study reveals the nutritive benefits of consuming neglected almond cultivars in Portugal, and the novel data reported here could be of interest to growers, processing companies and consumers.
