Abstract

El TFE está enfocado a aumentar el conocimiento sobre la necesidad de determinar la calidad del alimento que se le proporciona al ganado bovino en Isla Reunión. En dicho estudio se evaluará la cantidad de ácido butírico presente en 50 muestras de ensilaje reunionés macerado en agua y congelado. La presencia de ácido butírico en el ensilaje supone una disminución de su calidad nutricional debido fundamentalmente a la acción de las bacterias del género Clostridium que provocan una putrefacción del forraje macerado. Se utilizará la técnica de la cromatografía en fase gaseosa para determinar las cantidades no solo de ácido butírico sino también de otros componentes del ensilaje como el ácido acético y el ácido láctico (mayoritariamente), que son característicos de la fermentación anaerobia realizada en el proceso de elaboración del ensilaje. Al realizar la fermentación, se produce una inhibición de los microorganismos que provocan la putrefacción. Pues, su éxito reside en permitir la degradación hasta límites que son óptimos para la conservación del forraje, en unos valores de pH por debajo de 5.
