Bioactividad de colorantes rojos naturales

Abstract

Los colorantes alimentarios son los aditivos cuya misión es proporcionar el color deseado y esperado de cada alimento. Determinados pigmentos naturales, aparte de color, pueden aportar propiedades añadidas que les confieren cierta bioactividad. Se consideran compuestos bioactivos aquellos que, sin ser nutrientes, actúan en el metabolismo y ejercen un efecto beneficioso para la salud, evidenciado en acciones que previenen ciertas enfermedades. El interés por estas sustancias radica en potenciar los efectos biosaludables de la dieta. En este artículo se revisan las propiedades bioactivas de carotenoides, antocianos y betacianinas, las tres familias de pigmentos empleados como colorantes rojos naturales de uso alimentario.
