Análisis del perfil de azúcares en zumos de frutas comerciales

Abstract

Dentro de las industrias agroalimentarias, los zumos y bebidas de frutas ocupan una parcela importante, ya que son productos muy consumidos en todo el mundo. Para las industrias de los zumos es importante disponer de métodos de análisis para caracterizar sus materias primas y formular sus productos. Analizar los perfiles de azúcares de los zumos comerciales de frutas contribuye a controlar su calidad. Este trabajo presenta los análisis de azúcares y polioles de zumos comerciales de naranja, manzana y piña, utilizando cromatografía de intercambio aniónico con detección amperométrica de pulsos (HPAEC-PAD). Observando el perfil de azúcares se puede determinar el tipo de fruta utilizado para la elaboración del zumo: naranja, manzana o piña. Para zumos de la misma fruta se han obtenido perfiles de azúcares similares, encontrándose las variaciones en la proporción de concentraciones de glucosa/fructosa, glucosa/sacarosa y fructosa/sacarosa.
