Análisis del perfil de azúcares en la autentificación de zumos de frutas

Abstract

El objetivo general ha sido estudiar el perfil de azúcares por HPAEC-PAD para la autentificación de zumos de frutas de naranja, manzana y piña. Este objetivo general se ha dividido en los siguientes objetivos parciales: 1. Optimizar el método de análisis de azúcares por HPAEC-PAD. Para ello se han ensayado distintas concentraciones de NaOH en la fase móvil y distinta velocidad de flujo. Se han analizando muestras de azúcares, zumos concentrados y zumos comerciales. 2. Determinar el perfil de azúcares de jarabe de glucosa y azúcar invertido. Se han analizado distintas muestras de jarabe de glucosa y azúcar invertido de de uso alimentario disponibles en el mercado. 3. Estudiar el perfil de azúcares en zumos concentrados y naturales de naranja, manzana y piña. 4. Comprobar la efectividad del método en la autentificación de zumos en sistemas modelo. Para ello se han diseñado sistemas modelo de zumos reconstituidos a partir de los zumos concentrados estudiados preparados adicionando cuatro de los jarabes de glucosa analizados. 5. Comprobar la efectividad del método en zumos comerciales. Se han analizado zumos de naranja, manzana y piña de distintas casas comerciales, preparados a partir zumos naturales o concentrados 6. Caracterizar las propiedades físico-químicas y sensoriales de los zumos comerciales analizados. Se han determinado distintos parámetros físico-químicos y mediante un panel sensorial se han estudiado propiedades organolépticas.
