Procesado en fresco del melón "amarillo" y evolución de su calidad sensorial

Abstract

Se ha procesado melón "Amarillo" en secciones trapezoidales y se envasaron en atmósfera modificada (EAM) pasiva durante 14 días a 5ºC, bajo tres películas de polipropileno: microperforado, biorientado y orientado. Como testigo se utilizó un plástico macroperforado. Al final de la conservación, las concentraciones de O2 Y CO2 generadas en los distintos plásticos fueron similares y como media del 4-5% O2 y 12% CO2. Los tratamientos EAM fueron muy eficaces para preservas las características sensoriales, frenar las podredumbres y las pérdidas de peso (inferiores al 0,1%), mejorando los resultados del testigo. El mejor resultado se obtuvo con el polipropileno orentado de 35 u. Es preciso acometer nuevos ensayos de EAM, combinada con coadyuvantes, para optimizar la firmeza.
