Abstract

Con el propósito de frenar el pardeamiento enzimático sobre las superficies de corte de tubos de hinojo enteros y cortados en mitades, se aplicaron diferentes soluciones antipardeantes preparadas a partir de ácido ascórbico, ácido cítrico y EDTA. Para determinar el pardeamiento se evaluó el color a lo largo de la conservación en aire humidificado a 15ºC durante 8 días para los bulbos enteros y 4 días para las mitades. Periódicamente se determinaron la actividad respiratoria y la emisión de etileno y al inicio y termino de la conservación los atributos químicos, sensoriales y el pardeamiento. Los bulbos de hinojo mostraron un comportamiento respiratorio no climatérico, que se estimuló cuando se cortaron en mitades. Las disoluciones de ácido ascórbico y de ácido cítrico estimularon en bulbos enteros la actividad respiratoria y la emisión de etileno y no controlaron el pardeamiento. Sin embargo, en mitades de bulbo el ácido cítrico, que inicialmente ocasionó una estimulación, freno el metabolismo de una manera similar al EDTA aunque provocando un daño químico. Por su parte, el lavado con 5 g L de EDTA afectó mucho menos al metabolismo de los bulbos enteros y cortados en mitades y fue parcialmente eficaz para controlar el pardeamiento.
