Abstract

Este trabajo fin de estudios pretende analizar, cómo su título indica, el uso del aceite de palma, o grasa de palma en los productos alimentarios. Para ello, se ha realizado una revisión de lo publicado acerca de este aceite vegetal para poder: En primer lugar, definir en qué consiste, cuál es su origen y la evolución que ha tenido el uso de este. En segundo lugar, se ha estudiado por qué el aceite de palma es tan utilizado no solo en la industria alimentaria sino en el biocombustible. Este uso ha generado una controversia en la sociedad, a raíz de publicaciones de estudios que han llegado al consumidor y que no favorecen la imagen de esta grasa vegetal. En tercer lugar, se analizará el uso del aceite de palma en productos alimentarios en España, además de recoger la legislación aplicable, las marcas que han decidido eliminar esta grasa vegetal y sustituirla por otras. También se analizará la publicidad que han utilizado determinadas marcas publicitando la eliminación de la grasa de palma, y si las empresas han obtenido algún tipo de beneficio al eliminarlo. Asimismo, se ha intentado analizar que piensa el consumidor en España sobre el aceite de palma. En cuarto lugar, se ha realizado un estudio empírico para averiguar y analizar los datos obtenidos sobre el conocimiento de los consumidores del aceite de palama, si lo consumen, que piensan sobre él, etc. Finalmente se obtendrán diferentes conclusiones tanto de la revisión realizada sobre las publicaciones recogidas en este trabajo, así como las conclusiones derivadas del estudio empírico. Por último, se presentarán las limitaciones del estudio.
