Abstract

Il cibo riveste un ruolo sempre più importante nelle città contemporanee che investono sulla dimensione estetico-sensoriale della loro offerta al fine di rendere la propria immagine sempre più seduttiva (Amendola 2015). Inserita nel patrimonio storico-culturale locale, l’offerta alimentare è diventata una risorsa primaria per un numero crescente di località che attorno al suo marchio hanno costruito politiche e interventi finalizzati ad aumentare la loro attrattività turistica. L’articolo dedica attenzione al tema dell’attrattività turistica del cibo nelle città contemporanee attraverso la lettura dei risultati di un’analisi secondaria comparata condotta dagli autori sui dati dell’indagine “Il turismo internazionale dell’Italia” realizzata dalla Banca d’Italia nel 2002 e 2015. Nella prima parte del saggio verrà posta attenzione ai cambiamenti dei consumi e della spesa totale e alimentare dei turisti internazionali in Italia nel periodo 2002-2015, con attenzione all’età, alla professione e alla nazionalità dei turisti. Nella seconda parte verranno invece ricostruiti i profili di stile di consumo dei turisti internazionali, con attenzione al Paese di provenienza, alla capacità di spesa e alla destinazione turistica. Il fine generale dello studio è rilevare i cambiamenti della domanda turistica internazionale sotto il profilo dei consumi e della spesa alimentare e di evidenziarne le nuove tendenze nel panorama italiano

The article draws attention to the topic of the food tourist-attraction in contemporary cities by reading the results of a comparative secondary analysis conducted by the authors on the survey “International tourism in Italy” carried out by the Bank of Italy in 2002 and 2015. In the first part of the essay, attention is paid to changes in consumption and total and food expenditure of the international tourists in Italy during 2002-2015. In the second part are depicted the consumption profiles of the international tourists. The general purpose of the study is to analyze changes in international tourism demand in terms of consumption and food expenditure and to highlight the new trends in Italy.
