Abstract

La Tesis se ha basado en el estudio de la actividad antioxidante de compuestos fenólicos presentes en el aceite y la caracterización de los mismos. Así pues, en la primera investigación realizada se hace uso del fluoróforo 2,3-diazabiciclo[2.2.2]oct-2-eno (DBO) como alternativa al tradicional método espectrofotométrico en el cual se utiliza el radical libre 2,2-difenil-1-picrilhidrazil (DPPH•). Posteriormente se realizó una comparación de tres métodos para la extracción de fenoles del Aceite. Esta metodología unida al uso de una cromatografía líquida de alta resolución equipada con un detector UV-Vis de diodos (HPLC-DAD) permitió identificar y cuantificar 13 fenoles. Finalmente se utilizó un equipo de cromatografía líquida de ultra alta resolución (UHPLC) acoplado a una fuente de ionización electrospray (ESI) y un detector de espectrometría de masas en tándem (MS/MS). La aplicabilidad y fiabilidad de esta metodología se han confirmado analizando muestras de aceites de oliva de diferentes variedades.
