Relaciones pulpa-hueso en el desarrollo de la aceituna

Abstract

La pulpa de la aceituna, biológicamente el mesocarpo, es la parte del fruto de interés económico, por ser donde se realiza la formación y almacenamiento del aceite, y el tejido que se consume en el caso de aceitunas de mesa. Sin embargo, el desarrollo del hueso, biológicamente el endocarpo, es también una parte íntegra de la formación de la aceituna, y compite con el crecimiento del mesocarpo, por lo que la relación pulpa-hueso es un parámetro crítico en la producción. Típicamente la relación pulpa-hueso de diferentes genotipos obtenida bajo diferentes condiciones de cultivo se obtiene por la medida en peso fresco de ambos tejidos y la determinación de su ratio. En investigaciones recientes se ha observado que las pautas de crecimiento de ambos tejidos no son iguales entre todas las variedades, lo que ofrece nueva información para estrategias de mejora en la relación pulpa hueso. También se ha profundizado en la evaluación de estos tejidos y su relación por los parámetros de peso seco, volumen y contenido energético en calorías, lo que ha permitido establecer diferencias entre genotipos previamente no percibidas.
