Aceites de semilla de girasol rica en fitosteroles

Abstract

El propósito de nuestro trabajo ha sido evaluar el contenido en fitoesteroles en semillas de girasol modificadas genéticamente, y durante los procesos de extracción y refinación de su aceite, con el objetivo general de obtener aceites de girasol más saludables y con aplicaciones en el campo de la nutraceutica. Para el estudio se seleccionó un número reducido de semillas de girasol modificadas genéticamente en fitoesteroles, a las que se les analizó el contenido total de compuestos esterólicos libres y glucósidos. Los esteroles cuantificados en los aceites extraídos con hexano, disolvente de polaridad baja, suponen sólo una parte de los presentes en la semilla de girasol, con un contenido en esteroles libres elevado y una baja concentración de esterol glucósidos. Por el contrario, la extracción con un disolvente de polaridad elevada, como es el cloroformo:metanol, facilita la extracción completa de la grasa ligada retenida en la harina, donde se obtuvieron concentraciones muy bajas de esteroles libres y elevadas concentraciones de esterol glucósidos. Por otra parte, se presentan resultados de rendimiento en aceite de las semillas ricas en esteroles tanto en la extracción mediante prensado como en la posterior extracción con disolvente y se detalla la selección de las condiciones de refinación que ha permitido minimizar las pérdidas de compuestos esterólicos en los procesos de refinación física y química y obtener aceites de alta calidad compatibles con contenidos muy elevados en esteroles libres y ésteres de esteroles.
