Lactic acid bacteria that grow in soy milk and active isoflaviones, product containing said bacteria and uses thereof

Abstract

[EN] The invention relates to a bacterial strain of lactic acid belonging to the genus Lactobacillus, characterised in that it has alpha-galactosidase activity and beta-glucosidase activity, for the production of active isoflavones. In addition, the invention relates to the use of at least one bacterial strain of lactic acid belonging to the genus Lactobacillus for the production of a functional fermented product based on soy milk having a high concentration of active isoflavones, for the production of a food supplement and for the production of a nutraceutical based on a bacterial lyophilisate or concentrate. Finally, the invention relates to a method for the prevention and/or treatment of a disease caused by estrogens.
