Abstract

La crioconcentración y los tratamientos a alta presión son tecnologías innovadoras que pueden combinarse para conservar zumos durante tiempos prolongados. La modelización matemática es una herramienta útil para desarrollar y optimizar estos nuevos procesos, pero se enfrenta a la carencia de datos sobre propiedades físicas a alta presión. Por ello, en este trabajo, se han determinado las propiedades volumétricas del zumo de naranja a alta presión y bajas temperaturas utilizando un piezómetro de volumen variable. El volumen específico, la compresibilidad isoterma y la expansión térmica obtenidos muestran características similares a las del agua.
