Abstract

[EN] This paper shows the application of modern computational procedures to establish the right time for the sterilization process of canned skipjack tuna. The present analysis is valid in al1 those cases, such as ours, where heat transfer takes place mainly by conduction

[ES] En este trabajo se aplican procedimientos computacionales para establecer el tiempo de esterilización en la fabricación de conservas de listado. El análisis efectuado es aplicable en todos aquellos casos en los que la transmisión de calor tiene lugar por conducción.
