Difusividad térmica en conservas de túnidos

Abstract

This study was restricted to conduction- heating products, and the aim was to find data for the sterilization time calculation. The thermal diffusivity for each product was determined using the heat penetration determinations and composition data. The values for the thermal diffusivity obtained can be considered to be acceptable and applied in the determination of thermal process.
