El consumo de estas glicotoxinas no modifica sustancialmente el CL enzimático, sin embargo, se produce un incremento importante del CL no enzimático, reflejado en el acumulo de pentosidina, que podría llegar a deteriorar la rigidez ya que ambos resultaron negativamente correlacionados (P=0,0230). Además, el incremento de estos AGES en el hueso, propiciado por la dieta, contribuye a disminuir ligeramente la DEXA. Aunque los marcadores óseos habituales no se modifican sus correlaciones con la carga máxima soportada o la energía de rotura indicarían que el estímulo del CL enzimático favorece las propiedades biomecánicas del hueso.
