Geoarqueología y arqueometría de la sal

Abstract

A lo largo de las últimas décadas la investigación históricoarqueológica sobre las salazones en época antigua ha evolucionado considerablemente. El análisis de los restos anatómicos de especies piscícolas encontradas en piletas de salazones y ánforas nos permite conocer mejor la base de su elaboración y determinados aspectos relacionados con su producción. En paralelo, el estudio de la epigrafía anfórica y la revisión de las fuentes literarias, están permitiendo adentrarnos en el siempre difícil mundo de su comercialización. Pero, hasta el momento, la sal, sustancia básica empleada en su elaboración, apenas había sido tenida en consideración, siendo, como es, un producto básico para el correcto desarrollo de la actividad celular de humanos y herbívoros desde que, en el neolítico, la dieta alimenticia pasara a ser principalmente cerealística y el ganado se viera privado de libertad por su estabulación para conseguir en libertad la sal necesaria para su correcta alimentación al ser estabulado.
