La percepción social de la calidad de los alimentos

Abstract

En los últimos cinco años hemos asistido a varios episodios de alarma en la opinión pública relacionados con los alimentos. Esta alarma ha sido proocada por las enfermedades detectas en diferentes cabañas ganaderas su posible paso a la cadena alimentaria, o bien por algunas alteraciones o manipulaciones >irregulares> sufridas por dichos alimentos en el proceso de transformación.
