Detección y cuantificación de genes de resistencia a antibióticos en productos lácteos

Abstract

La resistencia a antibióticos en microorganismos oportunistas y patógenos es un problema de salud pública a escala mundial que complica y encarece el tratamiento de las enfermedades infecciosas (Levy and Marshall, 2004). La resistencia a antibióticos en los microorganismos comensales y beneficiosos no constituye en sí misma una preocupación. Sin embargo, estas poblaciones podrían servir de reservorios de determinantes de resistencia que, en último término, se pueden transferir a los patógenos. De hecho, varios autores creen que la cadena alimentaria es una de las principales vías de transmisión de genes de resistencia, sea durante la elaboración de los alimentos o durante el tránsito intestinal (Teuber et al., 1999; Salyers et al., 2004). En general, el análisis de la resistencia a antibióticos implica el aislamiento de los microorganismos y su ensayo frente al antibiótico de interés. En algunos ecosistemas, sin embargo, se estima que una mayoría de microrganismos no es cultivable, incluyendo los ecosistemas alimentarios (Justé et al., 2008). Con el fin de paliar estas limitaciones se han desarrollado una serie de técnicas moleculares cultivo-independientes (DGGE, qPCR, metagenómica funcional, etc.) para la caracterización microbiológica de estos hábitats. Estos métodos se están comenzando a aplicar también a la detección y cuantificación de determinantes de resistencia a antibióticos.
