Abstract

Procedimiento de preparación de aceitunas tipo negras. Procedimiento de elaboración de aceitunas negras en el que se hace un tratamiento con una sal de manganeso previamente al proceso de ennegrecimiento o durante el mismo. Este metal actúa como catalizador de la reacción de formación del color, obteniéndose un producto final con un color negro más intenso. y homogéneo que cuando se aplica el proceso sin manganeso.
