Abstract

Procedimiento para la identificación de albacora (Thunnus alalunga) en conservas de atún blanco, albacora o bonito del norte. El procedimiento se caracteriza por amplificar un fragmento de 187 pb denominado BDR, del gen del citocromo b, localizado en el ADN mitocondrial, por la utilización secuencial de dos endonucleasas de restricción sobre dicho fragmento amplificado, y por el análisis de los fragmentos resultantes que permiten diferenciar la especie Albacora de otras especies susceptibles de ser empleadas como substitutas de la misma en productos enlatados etiquetados como conservas de atún blanco, Albacora o Bonito del Norte, tales como Rabil (Thunnus albacares), Rojo (Thunnus thynnus), Patudo (Thunnus obesus), Listado (Katsuwonus pelamis), Bonito Sarda (Sarda sarda), Bacoreta (Euthynus alleteratus) y Melva (Auxis tházard). De aplicación en el sector alimentario.
