Abstract

Dispositivo para la fermentación controlada de vegetales en condiciones anaerobias provisto con sistema de descarga (ver figura en archivo de texto adjunto). Consiste en un sistema en el que puede realizarse la fermentación, el almacenamiento y la pasteurización de frutos vegetales. Dispone de: a) un sistema de desorción de CO2 y recirculación interna de salmuera, b) de un circuito de recirculación externa para el control del proceso; c) un sistema de descarga de frutos. A través del eje hueco de sujeción del tapón de cierre, se inyecta una corriente de nitrógeno para arrastrar el CO2 y mantener una atmósfera inerte. La parte superior del tapón está perforada por orificios a través de los cuales penetra la salmuera que es arrastrada por el nitrógeno en su ascensión, provocando la recirculación interna de la misma. Dispone de un circuito externo de recirculación que toma el líquido sobrenadante por encima de la rejilla de contención (3), y lo inyecta en la parte inferior del reactor. La descarga se realiza mediante el arrastre de los frutos por la salmuera, incorporando un tubo (12) que se embrida a la parte inferior del reactor.
