Abstract

El término leche fermentada incluye los productos lácteos obtenidos a partir de una tecnología equivalente a la de fabricación del yogur, pero que emplea para su elaboración microorganismos diferentes a Lactobacillus delbrueckii subsp. bulgaricus y Streptococcus thermophilus, los cuales son los únicos aceptados para la elaboración del yogur, tal y como establece la Norma de Calidad para este producto (RD 179/2003). El yogur posee una gran aceptación social basada en su tradicional reputación como alimento saludable y en sus excelentes características sensoriales, lo que junto a su riqueza nutricional convierte a estos alimentos en componentes ideales de una alimentación supuestamente funcional y candidatos por excelencia a la incorporación de microorganismos probióticos, fundamentalmente de los géneros Lactobacillus y Bifidobacterium.

La OTRI del Centro Tecnológico Nacional de la Conserva y Alimentación junto con la OTT del Consejo Superior de Investigaciones Científicas, colaboran en el Proyecto AGROCSIC, el cual fue aprobado por el Ministerio de Ciencia y Tecnología y financiado por el Ministerio de Educación y Ciencia. El objetivo principal de esta nueva actuación es estudiar las distintas líneas de trabajo de los Centros del CSIC relacionadas con la alimentación, para transferir sus resultados al sector industrial.
