Características químicas nutricionales y funcionales de los alimentos

Abstract

Durante los últimos 10-15 años la noción que la industria y el consumidor tenían de los alimentos se ha modificado sustancialmente. Las diversas crisis que arrasaron los mercados alimentarios durante ese periodo habían propiciado una falta de confianza del consumidor en el funcionamiento de la cadena alimenticia. La discusión sobre la aplicación de nuevas tecnologías, como la modificación genética, no hizo sino introducir nuevos temores y mayor confusión. Esta tendencia negativa (el alimento se concibe como un elemento potencialmente peligroso para la salud al contener contaminantes, virus, bacterias y polución orgánica e inorgánica) se incrementaba con la investigación en nutrición y las advertencias de los organismos de salud pública que recomendaban modificar los hábitos dietéticos en la ingesta de macro y micro-nutrientes (grasas, proteínas, azúcares, fibra y constituyentes inorgánicos). A consecuencia de todo esto se produjo una modificación progresiva de la dieta y del concepto de alimento, transformando con ello la percepción del mismo.

La OTRI del Centro Tecnológico Nacional de la Conserva y Alimentación junto con la OTT del Consejo Superior de Investigaciones Científicas, colaboran en el Proyecto AGROCSIC, el cual fue aprobado por el Ministerio de Ciencia y Tecnología y financiado por el Ministerio de Educación y Ciencia. El objetivo principal de esta nueva actuación es estudiar las distintas líneas de trabajo de los Centros del CSIC relacionadas con la alimentación, para transferir sus resultados al sector industrial.
