Abstract

El objeto es la detección del crecimiento de microorganismos dentro de recipientes cerrados de productos lácteos midiendo el cambio de los parámetros de propagación de ondas ultrasónicas que se propagan en su interior debido a las modificaciones que sufren los productos lácteos cuando crecen distintos microorganismos. La técnica consiste en introducir un pulso ultrasónico a través de la pared del recipiente, captándolo con un sensor tras atravesar dicho recipiente. La medida de los parámetros tales como el retardo, la amplitud de la señal y la distorsión armónica, delatan los cambios fisicoquímicos producidos por contaminación microbiana. Los procedimientos usados en la industria láctea son los habituales en microbiología clínica, por lo que son invasivos y muy costosos de mantenimiento y el análisis es más económico.
