Nueva actividad fructofuranosidasa para la obtención del oligosacárido prebiótico 6-kestosa

Abstract

La presente invención se encuadra dentro del campo de la industria biotecnológica y, en particular, en el sector agroalimentario dedicado a la obtención de oligosacáridos prebióticos para ser utilizados como ingredientes funcionales en productos dietéticos, productos lácteos, alimentos infantiles y alimentos para animales. Se proporciona un procedimiento de obtención, a partir de sacarosa, de oligosacáridos prebióticos, principalmente 6-kestosa, viable industrialmente, que utiliza una nueva actividad transfructosidasa asociada a la invertasa extracelular de la levadura Schwanniomyces occidentalis. También se proporciona un procedimiento para la obtención del producto enzimático con actividad transfructosilasa, así como de la correspondiente enzima pura. Algunos aspectos positivos del producto enzimático y de la enzima de la invención, son que presentan un variado espectro de actuación y una alta actividad específica, convirtiéndolos en candidatos idóneos para hidrolizar o modificar oligosacáridos. Otro aspecto importante a nivel industrial es que la enzima es estable durante largos tiempos de reacción a una temperatura de aproximadamente 50 ºC. La secuencia nucleotídica codificante para la actividad analizada muestra marcadas diferencias con la secuencia del gen previamente descrito. Las variaciones se muestran también en la invención.
