Abstract

Actualmente la inmensa mayoría de las ganaderías productoras de leche de vacuno, están dotadas de ordeño mecánico y de tanques de refrigeración. Estos tanques enfrían la leche ordeñada a temperaturas del orden de 4-6 °C y la mantienen así hasta que es retirada por los camiones-cisterna isotérmicos que la trasladan hasta el centro de recepción
