Cambios en la tecnología de desodorización de aceites comestibles y recuperación de compuestos de alto valor

Abstract

Un proceso importante en la refinación de aceites comestibles es la desodorización. La desodorización es una destilación neutralizante que tiene por objeto eliminar de las grasas comestibles las sustancias que les comunican olores y sabores que las hacenno aptas para el consumo humano directo,y que no han sido retiradas durante los procesos anteriores de refinación.

Esta investigación se ha realizado gracias al proyecto de investigación ALI 95 0517, subvencionado por la comisión Interministerial de Ciencia y Tecnología (CICYT). Además, la Fundación Interministerial de Ciencia y Tecnología (FICYT) ha subvencionado la instalación de frío y el Instituto Tecnológico de Asturias (ITA) ha proporcionado la beca
