Procedimiento de fabricación de gelatina de origen marino y producto así obtenido

Abstract

Fabricación de gelatinas a partir de pieles de animales marinos y de restos de tejido conectivo procedente de las fascias y músculo, mediante diversas etapas de elaboración. A partir de someter las pieles y/o tejido conectivo a varios lavados mediante una fuerte agitación en una solución de cloruro sódico en frío, se trata con un álcali diluido, procediendo a continuación a una neutralización y lavado con agua. El tratamiento con ácido orgánico es fundamental importancia siendo interesante la aplicación de ácido acético o láctico para obtener unas elevadas propiedades reológicas y rendimiento. Tras un lavado se procede a la extracción de la gelatina en agua mediante tratamiento térmico. El posterior secado se realizar a mediante calor, atomización o liofilización. A este material proteico se incorporan de diversos compuestos para constituir el producto final o gelatina.
