Nuevos productos pesqueros funcionales

Abstract

Debido a las nuevas tendencias en el sector de alimentación orientadas a productos más saludables, en breve, va a entrar en vigor la “Reglamentación sobre alimentos funcionales”. A pesar de que existen ciertas controversias en definir qué es y qué no es un alimento funcional, se podría definir como “aquellos alimentos que contienen componentes potencialmente saludables, incluyendo cualquier alimento modificado o ingrediente del alimento que pueda proporcionar un beneficio a la salud más allá del que contienen los nutrientes tradicionales”. Si bien, desde el punto de vista tecnológico, el término propiedad funcional o funcionalidad de un alimento se referiría a “cualquier propiedad no nutricional de un alimento o ingrediente que afecta a su utilización durante el procesado”.
