Procedimiento de preparación de moléculas del tipo betacarbolina a partir de aminoácidos de alimentos y productos naturales, que actúan como inhibidores reversibles de la enzima monoaminooxidasa (MAO). Los inhibidores reversibles de MAO se emplean en prevención y tratamiento terapéutico de enfermedades o condiciones relacionadas con desórdenes neurológicos como depresión, adicción, trastornos endocrinos, y en neuroproteccción contra enfermedades degenerativas. Los preparados de beta-carbolinas podrían tener utilidad, por tanto, como preparados farmacéuticos, preparados nutracéuticos y en alimentos funcionales o suplementos dietéticos.
