En este artículo se demuestra que los quitosanos son sustancias naturales fuertemente activas frente a Campylobacter, el mayor causante de enfermedades gastrointestinales bacterianas asociadas a los alimentos. Los estudios han descubierto que podrían disminuir la virulencia de dicho patógeno porque interfieren su anclaje en células intestinales humanas. Además, podrían ser una alternativa a los promotores de crecimiento en alimentación animal, así como un complemento alimentario bioprotector para alimentación humana.
