[ES] Procedimiento de conservación de leche cruda refrigerada con CO2 y posterior desgasificación. Procedimiento aplicable al sector de tecnología de productos lácteos. Consiste en un método para aumentar el periodo de conservación de la leche cruda refrigerada mediante inyección de CO2 a la leche en los tanques de almacenamiento en refrigeración y posterior desgasificación por calor y vacío para restituirle al producto sus propiedades organolépticas y destinarlo a su consumo como leche líquida (pasterizada, UHT, esterilizada) o a la elaboración de derivados lácteos.
[EN] Process which can be applied to the dairy-product technology sector. It consists of a method for increasing the storage period for refrigerated raw milk by means of the injection of CO2 into the milk in the refrigerated storage tanks and subsequent degassing by means of heat and vacuum in order to restore the product's organoleptic properties to it and to enable it to be consumed as liquid milk (pasteurised, UHT, sterilised) or to be used for producing dairy derivatives.
