Las bacterias ácido lácticas (BAL) y las bifidobacterias tienen una gran importancia por su carácter probiótico. El interés por estos microorganismos ha fomentado su aislamiento de diversas fuentes y el estudio de sus propiedades, siendo la actividad glicosídica una de las menos estudiadas.
